Banana, Date and Walnut Bread
- 1.5 cups self-raising flour
- 1.5 cups soy flour
- 1/2 tsp ground cinnamon
- 3/4 cup caster sugar
- 1/2 cup canola oil
- 2 tsp egg substitute
- 30 ml water
- 2 medium bananas (ripe)
- 1/2 cup milk
- 1/2 cup walnut pieces
- 1/2 cup chopped dates

Preheat the oven to 180C. Lightly grease a loaf tin with canola cooking spray.

Place the flours, cinnamon, sugar, egg, water, bananas and soy milk in a food processor and blend until smooth.

Fold the walnut pieces and dates into the mixture and pour into the prepared loaf tin.
Bake for 1 hour, or until a skewer comes out clean when inserted into the centre. Allow to cool slightly in the tin before turning out onto a wire rack.
