Banana, Date and Walnut Bread

  • 1.5 cups self-raising flour
  • 1.5 cups soy flour
  • 1/2 tsp ground cinnamon
  • 3/4 cup caster sugar
  • 1/2 cup canola oil
  • 2 tsp egg substitute
  • 30 ml water
  • 2 medium bananas (ripe)
  • 1/2 cup milk
  • 1/2 cup walnut pieces
  • 1/2 cup chopped dates
  1. Preheat the oven to 180C. Lightly grease a loaf tin with canola cooking spray.

  2. Place the flours, cinnamon, sugar, egg, water, bananas and soy milk in a food processor and blend until smooth.

  3. Fold the walnut pieces and dates into the mixture and pour into the prepared loaf tin.

    Bake for 1 hour, or until a skewer comes out clean when inserted into the centre. Allow to cool slightly in the tin before turning out onto a wire rack.
